

It is Friday and time to celebrate another food! Today, March 11th, is National Oatmeal Nut Waffles Day. I guess there really is a day for everything!
I like Waffles, but prior to this project, I had never even heard of oatmeal nut waffles. Never having them before, I didn’t really know what they should taste like, so I consulted an outside recipe for this one. I used a recipe from Taste of Home which you can access by clicking here.

The recipe doesn’t call for a specific nut to use, so I used half peanuts and half almonds. I finished the waffles off with a peach cinnamon syrup I made by adding 1 cup pureed peaches and a 1/4 tsp of cinnamon to a simple syrup and reducing it over low heat for 20 minutes.
