Earlier this week, I was over at my mom and she was making hummus. Hummus has a wide variety of uses and is a delicious snack. You can eat it with pita bread, fruit, vegetables, really anything you like. My mom made a beautiful plate of yellow grape tomatoes and apples sprinkled with lemon and fresh cracked black pepper.
Here is how you make the hummus. You will need:
– a 16oz can of chickpeas
– 1/4 liquid from the can of chickpeas
-4 tablespoons lemon juice
– 1 and a 1/2 tablespoons tahini
– 1 and a 1/2 cloves of crushed garlic
– 1/2 teaspoon salt
– 1/2 teaspoon cumin
– 2 tablespoons of olive oil.
To make, drain the can of chickpeas saving 1/4 of the liquid.
In a food processor combine the chickpeas, lemon juice, tahini, garlic, salt, and blend for 3-5 minutes until a smooth paste is made.
To serve, place the hummus in the bowl and drizzle the olive oil combined with the cumin over the top.
You can serve right away with a variety of scooping items or use as a spread on sandwiched, pitas, what ever you can imagine! Enjoy!

WE are having perfect spring weather too, something like this would really hit the spot. GREG
Thanks Greg, glad you are enjoying the nice weather as well!
