I was at my mom’s last weekend and she was making steak! Pretty good timing on my part. As usual, she cooked more than my brothers and I could eat (my youngest brother doesn’t like steak so that left my other brother and I with literally more on our plates). We ended up with leftover steak.What was one to do with leftover steak?
Make a steak sandwich! I love steak sandwiches! For this sandwich, I sliced the leftover steak and heated it up in the microwave.
The base is sourdough bread, the next layer was the steak, topped with goat cheese, roasted red bell peppers, mixed greens and finished with a second piece of sour dough bread. It was just as delicious as it looks!
I love steak, beef is my second favorite meat behind pork ( if you have followed my blog I have expressed my feelings on pulled pork BBQ). Stay tuned next week when I bring you a visit I took to Proffitt Farms, a organic grass fed beef farm outside Charlotte.
