On my tour of South Congress Street in Austin, I came across the old Central Feed and Seed building. This building no longer contains feed and seed, but instead has some pretty amazing tacos and home to Guero’s Taco Bar.
I decided to try the Al Pastor which consists of marinated pork, topped with chopped onions, cilantro and pineapple.
I also decided to add guacamole! After all aren’t tacos better with a little bit of guac? I usually say that adding bacon to anything makes it better, but in this case there is already pork on this taco. Adding Guacamole is all these taco needed.
This was an intriguing flavor combination. Onion, cilantro, and pineapple combined with the most amazing meat in the world (pork) makes me wonder what my own pork tacos would taste like? I am thinking some vinegar based NC pulled pork would be used This is an intriguing idea that I just might have to explore further…
