I am sure you have all heard of the tongue twister peter piper picked a peck of pickled peppers. Well have you ever had a pickled pepper? I had never had one, but was always curious as to what it would taste like. My mom and I had been talking about quick pickling some different foods and I could not pass up the idea to make my own pickled peppers…

a basket of peppers (see above)
1 tablespoon kosher salt
1 1/2 cups water
1/2 cup white wine vinegar
1 bay leaf
1/2 cup sugar
1 teaspoon red pepper flakes
Slice the peppers in half lengthwise. In a bowl, toss the peppers in the salt. Let them stand for half an hour.
In a saucepan, add the water, vinegar, sugar, bayleaf, and red pepper flakes. Bring to a boil and then turn off heat and let cool.
Rinse the salt of the peppers. Dry the peppers off trying to squeeze out as much moisture as possible when drying them off. I like to use mason jars ( in my opinion best containers around), but you can use whatever container you like. Take that container and place the peppers inside. Fill the container with the pickling solution. Let the peppers sit in the refrigerator for 3-6 hours. Now you have quick pickled your own peppers!
