Happy Friday! More importantly, Happy National Pecan Day! Today is the day to celebrate the pecan. When I think of pecans, there is only one food that comes to mind…..
PECAN PIE!! I usually have this dessert around the holiday season, but for National Pecan Day, I will make an exception. Pecan Pie is really easy to make, and the perfect way to celebrate this food holiday! In making this pie, I consulted my mom for a recipe.
National Pecan Day Pie
1 cup sugar
1 cup dark corn syrup
3 large eggs
1/4 tsp salt
2 tsp vanilla
1/2 stick unsalted butter ( melted)
1 1/2 -2 cups pecan pieces
A Pie Pan lined with your favorite pie dough
In a large bowl mix together the sugar, corn syrup, eggs, salt, vanilla, butter. Mix together with a large wooden spoon. Add pecan pieces. Mix together until everything is well incorporated.
Pour into pie shell and bake at 350 for 50-55 minutes. Best served after refrigerated over night to set up. If you don’t mind a runnier pie, serve warm with ice cream!
