To honor the King for his 75th Birthday, Magpies Cakes created a Blue Velvet mini cupcake. Blue Velvet? I have had Red Velvet, but could blue be done? Well yes it can! Blue is a rare color for food,other than blueberries I can not thing of any other food that is blue. So when seeing a blue cupcake, I had to give it a try. One of the many things I love about Magpies is that they specialize in mini cupcakes. The mini gives you the complete flavor profile of the dessert. The moist blue cake tasted very similar to its brother Red Velvet. Top that with a rich and creamy cream cheese frosting adorned with blue stars on top, and you have made a dessert that would make the King proud. This was my second trip to Magpies and it is now a must have stop when I travel through Knoxville, TN.

Neely - My daughter has been asking for blue velvet cookies ever since we made some red velvet ones. I told her people do not make blue velvet cookies or cakes. Now I am proven wrong and I guess need to make them for her. So cute!
