This refreshing gin based cocktail is exactly what you need now that the dog days of summer are here. The delightful balance of lime, mint, and lavender pairs well with the subtle herbal flavors of a London Dry Gin. If you plan on serving this for a crowd, you can double or triple the simple syrup recipe. If your cocktails will be made one at a time, refrigerate the simple syrup in a sealed container.
Lime Breeze

- 2 ounces Bombay Sapphire Gin (or other London Dry Gin)
- 2 ounces Lime Simple Syrup*
- 2 ounces fresh lime juice
- 2 ounces lime seltzer water
- 1 dash lavender bitters
- 5 fresh mint leaves
- lime for garnish
Instructions
- In a mixing glass add the gin, lime syrup, lime juice, seltzer and lavender bitters. Stir to blend.
- Put mint leaves in a cocktail glass. Press with back of a spoon to slightly bruise. Add ice to drinking glass. Pour the gin mixture into the cocktail glass. Stir. Garnish with lime. Serve.
Lime Simple Syrup

- 1/2 cup granulated sugar
- 1/2 cup water
- Zest strips from 2 limes
- pinch salt
Instructions
- Add the sugar, water, lime zest strips and salt to a heavy bottomed medium saucepan. Cook over medium heat, stirring constantly until mixture boils and sugar is dissolved. Remove the pan from the heat. Let syrup cool to room temperature. Remove lime zest. Use or store in refrigerator. Makes 3/4 cup.
