Who doesn’t enjoy something illegal. The idea of doing something illegal intrigues most people. Upon hearing the name Illegal Pete’s I was intrigued and had to find out more.
I did not find anything illegal, but I did find one awesome burrito!. Illegal Pete’s is very similar to Chipotle or Qdoba in that you stand in line and order your burrito. What makes Illegal Pete’s different is what happens after your ingredients are laid out on the tortilla.
I decided to go with a cilantro lime rice, black beans, pico de gallo, and cheese. Nothing to complicated. But the special part is what happens after all those delicious ingredients are placed on the tortilla.
THEY ARE MIXED TOGETHER!
This is something that I had never seen before. This mixing insures equal flavor through out every bite. I hate it when I bite into a burrito and only taste cheese and salsa, or just beans. The absolute worst is when you order one with guacamole and it is all on one side. You end up with one bite full of guacamole ( not that is a bad thing) which leaves the rest of the without it. That is the sad part. When I order a burrito, I want to taste everything I ordered in each bite. Mixing solves all of these problems. I think every burrito place should mix their burrito.

Illegal Pete’s has several locations in Boulder and Denver. The one I went to was at the beginning of Pearl Street. Pear Street’s pedestrian mall is one of the coolest and unique things I have seen in a college town, There are plenty of entertaining street performers, shops, restaurants, trees providing shade, and of course breathtaking views of the surrounding mountains. It is a pretty amazing place to spend an afternoon.

Ohhhhh Taylor. Honey, you missed the BEST part of Pete’s! The fish tacos! Not to mention their poblano pesto… I DIE. Pete’s is a million times better than Chipotle or Qdubs.
Love the picture with aluminum foil boca. (How do you spell that word?) Anyway, you were able to make even burritos look delicious.
I love that you can get a kids size burrito there and that they have more/better things to add than anyone else.
So…at Chipotle you can ask them to mix your burrito.
I find it so hard to believe that this place is better than Chipotle.
That’s such a great idea. We have this amazing burrito truck in Portland, Los Gorditos, and the sour cream is always poorly distributed. Mixing is simple fix, but really smart!
Burritos like that are my absolute favorite thing to eat. Totally on my last meal request list!
