It is the peak of summer. For tomato lovers this means lots and lots of tomatoes. So what to do with them all?
Red, purple, yellow, green, or some combination in between, every tomato works great in Panzanella.

All you need are fresh tomatoes and toasted bread crumbs. Combine these with a little bit of cheese, herbs, a fresh vinaigrette, and you have a summer meal that is perfect for lunch or a summer entertaining party!

Use whatever color tomatoes you can find. If they are juicy and ripe, they will do just fine.
I am trying a little bit of a different format to present the recipes, so here is my Mom’s version of the classic Italian summer salad; Panzanella.
