Grilling Fruit 2nd attempt…

So my first attempt at grilled fruits didn’t work out as well as I had planned. O well, “if at first you don’t succeed, try again” So here is a second attempt at grilled fruit that ended with a little better result…

This time, the grilled fruit of choice was apricots! I have had grilled peaches before, so I had a feeling the apricot would grill nicely. I was correct. With it being the beginning of apricot season, the apricots at the store were at many different levels of ripeness. When grilling these delicious fruits, you want to make sure that yours are ripe.

You want to make sure that you coat your apricots in a sauce or glaze to prevent them from sticking on the grill. In addition, make sure your grill is nice and hot. The hot grill and glaze will allow the apricots to develop nice grill marks on them.

Here is what you need to feed 4-6 people.

6 ripe apricots,  halved and pitted and cleaned.

2 tsp olive oil

1 1/2 tsp fresh squeezed lemon juice

1/4 cup honey

1/8 tsp. salt

1/8 tsp. freshly ground pepper

dash of cayenne pepper (optional)

Place apricots in a medium sized bowl. In a small bowl, mix together the olive oil, lemon juice, honey and salt, pepper, and cayenne pepper if you choose. Whisk together to create a sauce. Pour sauce over the apricots in the medium bowl. Toss apricots so they are evenly coated in the sauce.

Over a hot grill, place apricots flesh side down onto grill grates. Grill for 1-2 minutes until nice grill makes develop. Flip and grill the skin side for a minute until nice grill marks develop. When done remove from grill.

Now that your apricots are grilled, there are several options on ow to serve and eat them. You can use them in a salad or serve as a side with an entree. I prefer to serve them for dessert with whipped cream!

Here is my whipped cream recipe. I added 2 tsp of Grand Marnier.

elle marie - I really like how subtle yet intoxicating grilled fruit can be… I wonder if I can add a dollop of clotted cream?
