My mom decided to combine it with bacon and tomatoes and serve over cornbread. For the cornbread you can uses the recipe seen here.
For the rest of the dish, you will need: (Adapted from Edna Lewis, Gift of Southern Cooking)
6 slices of bacon
4 cups washed trimmed and sliced okra (about 1/2inch slices)
1 Large onion chopped.
1 clove chopped garlic
4 medium size ripe tomatoes cut into 1/4 inch strips
salt and pepper to taste
Cook the bacon in a pan until crispy. Remove the bacon from the pan, but leave the bacon fat. Over medium heat add the sliced okra and cook for about 10 minutes stirring often. Add the chopped onion, garlic, salt and pepper, and cook for an additional 5 minutes while continuing to stir frequently. Reduce heat to low and add in the tomato wedges. Partially cover the pan and cook for 3-4 minutes until the tomatoes are heated through. Crumble the cooked bacon. Serve over cornbread with bacon crumbles added.

Chris @ bonviveur - Okra is an interesting vegetable. In S.E.Asia, they are also known as lady fingers and is commonly served stir-fried with some hot chilli sambal. In addition, they are also added (at the last stages of cooking) to an Indian fish-head curry. Delicious!
Elaine from Cookware Help - A lot of people I know don’t like okra, but we love it. We usually stir-fry okra with some ground meat and anchovies, or just steam them and serve with dips. And this recipe sounds so good that I might make it as a taco filling or simply serve it over cooked white rice. YUM!
Arwa - My brother loves Okra. It’s the only vegetable he likes. In Pakistan we make it by cutting into long strips and then frying in a bit of oil to remove its stickiness…in a seperate pan soften onions and then add chopped tomatoes, salt, red chilli powder, turmeric and coriander powder according to taste. Whip some yogurt into it and lastly add the okra and cook till soft.Tastes delicious with bread or rice!
Niki - I absolutely hate Okra – no offense
But I guess my tastebuds haven’t matured enough yet. Everytime I DO get the courage to pop some pieces into my mouth, all I get is some slimy… goo… ugh. My parents gobble them up, I guess they love it.
Sierra - I LOVE Okra! It’s the most delicious veggie ever! (In my opinion, at least, lol.) I’m actually eating some right now with some rice, shrimp, and chopped bell peppers. I’m from the South (Louisiana) so I was practically raised on this stuff.
Jeff Portaro - Besides eating it raw out of our garden, we like to cut it up and bread it with Jiffy Corn Muffin mix and then fry it in a pan of oil until it starts to blacken. Nothing beats fried Okra.
