I will just start off by stating that I love Blueberry muffins. I will eat them any time of day. Yes, they are great for breakfast, but they are so easy too make why not eat them all of the time?

Here is the recipe for my Mom’s Blueberry Muffins
6 tablespoons unsalted butter
2 tablespoons vegetable shortening
2/3 cup granulated white sugar
1 tablespoon Honey
2 eggs
1 teaspoon vanilla
¾ to 1 cup milk
2 ¼ cup all purpose flour
2 ½ teaspoon Baking powder
½ teaspoon salt
1/8 teaspoon freshly ground nutmeg
1 1/2 cups washed, dried blue berries
1. Mix together the dry ingredients (flour, sugar, baking powder, salt, nutmeg). In the microwave melt the butter and shortening and honey. Combine this with the milk and eggs and vanilla to create the wet ingredients. Stir together the wet and dry ingredients. Fold in the blueberries. Bake at 350 degrees F for 15-18 min (until golden brown on top).
