BBQ Bacon Wrapped Scallop Mt. Pleasant,SC

As promised here is something from the tents at the Oyster Festival……..

My first stop was the Red’s Ice House tent. Their menu included a BBQ bacon wrapped scallop. Mmmmm bbq bacon wrapped deliciousness is what this dish should be called. You are looking at a scallop wrapped in bacon and covered with bbq sauce. I have told you about how adding bacon dish makes that dish better, well here is another example.

The scallop in this dish was cooked perfectly. There was no raw undercooked center nor any rubbery overcooked texture. The bacon  was tender and smoky with a nice bit of saltiness. The addition of the BBQ brought the dish together.The scallops were baked, allowing the BBQ caramelize and develop a sweet and crunchy crust on the bacon and scallop. These definitely tasted as good as they look.
