another one for the college kids, who are still studying…

Colleges in the South are out for the summer, while those in the North are in the middle of their exams. For all those students who procrastinate with baking (like I did) here is another cookie recipe to make.  These are oatmeal, butterscotch, toffee and coconut. If you are done with school then congrats! Cookies are a perfect way to celebrate!

Ingredients (adapted from Quaker Oats Oatmeal cookie recipe)

1/2 lb (2 sticks) softened butter

1 cup  dark brown sugar

1/2 cup granulated sugar

2 eggs

3 cups Oats (uncooked)

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1 1/2 cups shredded coconut

1 cup  butterscotch morsels

1/2 cup Heath (or toffee) bits

1. Turn your oven on to 350 degrees

2. In a bowl combine the flour, baking soda, salt, and cinnamon. In a mixing bowl cream the butter, brown sugar and granulated sugar until a nice creamy consistency. Add the vanilla and one egg. Mix. Add second egg. Mix. Continue mixing while gradually adding the flour. Fold in the rest of the ingredients, stirring until everything is incorporated.

3. On a nonstick baking sheet, drop the cookies in sphere shapes. Bake for 12-15 minutes (depending on the size of your cookies)
