One of my favorite desserts (it is impossible to name a favorite) is banana pudding. When in Oxford, I heard from multiple sources that I needed to check out the BBQ and banana pudding at Handy Andy’s Grocery. I usually address dessert second, but in this case we are dealing with banana pudding. Banana pudding is one of the few things that trumps my love of BBQ.

Banana pudding is like a fine wine, it only gets better with age. The worst thing you can do is eat the pudding right after it is made. You have to give time for the pudding (should always be made from scratch no boxed mix here), bananas, and vanilla wafers to develop their unique flavor combination. Yes the bananas will turn brown, and yes the wafers will get slightly soggy, but this is what should happen in a good banana pudding. You should make you pudding a day ahead so it has time to begin the “aging process”. In the next few weeks, I will be making my own version of this amazing dessert. The pudding at Handy Andy’s had all of the traits found in an amazing banana pudding. With the first bite, I understood why people recommended I try it. The bananas, wafers, and pudding all had time to meld together and create this amazing aroma and flavor that is present in a great banana pudding. The only way to truly appreciate this amazing dessert is to come down to the South and try it for yourself.
