Yesterday was July 4th! For many Americans this day is celebrated with grilling out and fireworks! I did not partake in any fireworks, but I did go over to my mom’s house for some grilling. Here are a few of the items we decided to put on the grill.
I love grilled vegetables. Especially grilled asparagus!
In addition to the asparagus there was pineapple!
My mom took this grilled pineapple and combined it with yellow heirloom tomatoes, chopped red bell peppers, lime juice, chopped garlic, diced jalapeno, salt and pepper to create this amazing salsa!
To accompany these vegetables there were burgers
and pineapple teriyaki pork tenderloin!
Mmmm yes this did taste pretty amazing. Oscar and Murphy thought so as well.
These were not done on the grill, but baked in the oven. Jalapeno poppers!
Wrapped in bacon and stuffed with a cream cheese filling, these peppers were pretty hot. You can tell by my brother sweating. These were tasty, but burned the mouth a little.
I decided to take one of the burgers add the salsa, baked beans, and top it with a jalapeno popper! This might look a little gross, but it tasted amazing! How do you end an awesome meal like this one? Well have blackberry cobbler with lavender whipped cream!
My grandmother enjoyed it, and Murphy looked pretty interested as well.
My mom bought these blackberries from the farmers market. They were grown in Kings Mountain, NC, which is about 30 miles outside of Charlotte. The battle of Kings Mountain was actually one of the turning points of the revolutionary war, so they fit perfectly into the 4th of July theme ( My mom really wanted me to mention that).
After all of this food I pretty much did the same thing Oscar and Murphy did.
